Herb-baked Salmon
Ingredients
- Servings: 2
- to taste vegetable oil cooking spray
- 3/4 lb salmon fillet
- 1 tablespoon dijon mustard
- 1/4 cup fresh parsley, chopped
- 1 tablespoon fresh oregano (or 1 tsp dried)
- 1 tablespoon fresh thyme (or 1 tsp dried)
- 1/2 cup plain breadcrumbs
- salt & pepper, freshly ground
- 1 egg
Recipe
- 1 preheat oven to 350 f. line a baking tray with foil. spray with vegetable oil.
- 2 wash salmon, pat dry and spread mustard over top.
- 3 mix together parsley, oregano, thyme and bread crumbs. season with salt and pepper. blend in egg to bind mixture together.
- 4 spread over the mustard.
- 5 bake 20 minutes for 1-inch thick fillet, 25 minutes for 2-inch fillet.
