Mediterranean Haddock Packets

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 zucchini, diagonally sliced about 1/4 inch thick
  • 1 small onion, thinly sliced
  • 4 pieces haddock fillets, frozen
  • 1 1/2 cups cherry tomatoes, quartered
  • 1/3 cup sliced green olives or 1/3 cup black olives
  • 2 tablespoons capers, drained, rinsed and chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1/4 teaspoon pepper

Recipe

  • 1 preheat oven to 450degrees.
  • 2 cut four 15 inch squares of parchment paper; fold each crosswise in half, then open.
  • 3 place 1/4 each of the zucchini and onion onto side of each square; top with haddock.
  • 4 divide tomatoes, olives and capers over fish.
  • 5 sprinkle each with 1/4 of the oil, lemon juice, oregano and pepper.
  • 6 fold paper over so that edges meet, double fold edges and pinch to seal.
  • 7 bake on a baking sheet at 450 degrees for about 20 mins or until fish flakes easily and vegetables are tender.
  • 8 let stand for 2 minutes before opening.
  • 9 serve over cooked rice or orzo pasta, pouring any juices from packet on top.
