Mediterranean Haddock Packets

Ingredients

- 2 zucchini, diagonally sliced about 1/4 inch thick
- 1 small onion, thinly sliced
- 4 pieces haddock fillets, frozen
- 1 1/2 cups cherry tomatoes, quartered
- 1/3 cup sliced green olives or 1/3 cup black olives
- 2 tablespoons capers, drained, rinsed and chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- 1/4 teaspoon pepper
Recipe
- 1 preheat oven to 450degrees.
- 2 cut four 15 inch squares of parchment paper; fold each crosswise in half, then open.
- 3 place 1/4 each of the zucchini and onion onto side of each square; top with haddock.
- 4 divide tomatoes, olives and capers over fish.
- 5 sprinkle each with 1/4 of the oil, lemon juice, oregano and pepper.
- 6 fold paper over so that edges meet, double fold edges and pinch to seal.
- 7 bake on a baking sheet at 450 degrees for about 20 mins or until fish flakes easily and vegetables are tender.
- 8 let stand for 2 minutes before opening.
- 9 serve over cooked rice or orzo pasta, pouring any juices from packet on top.
