Potato Seafood Chowder

Ingredients
- Servings: 4
- 2 fish stock or 2 clam juice
- 2 medium russet potatoes, peeled and cubed
- 1 cup sliced onion
- 1/2 cup sliced celery
- 1/8 teaspoon crushed saffron (optional)
- 2 cups milk, divided
- 8 ounces haddock or 8 ounces cod fish fillets
- 1/2 cup peeled and deveined small shrimp
- 1 tablespoon cornstarch
- salt and pepper
Recipe
- 1 combine stock, vegetables and saffron in slow cooker; cover and cook on high 4-5 hours, adding 1 1/2 cups milk during the last 30 minutes.
- 2 add seafood during the last 15 minutes.
- 3 stir in combined remaining 1/2 cup milk and cornstarch, stirring, 2-3 minutes.
- 4 season to taste with salt and pepper.
