Potato Seafood Chowder

Total Time: 4 hrs 5 mins Preparation Time: 5 mins Cook Time: 4 hrs

Ingredients

  • Servings: 4
  • 2 fish stock or 2 clam juice
  • 2 medium russet potatoes, peeled and cubed
  • 1 cup sliced onion
  • 1/2 cup sliced celery
  • 1/8 teaspoon crushed saffron (optional)
  • 2 cups milk, divided
  • 8 ounces haddock or 8 ounces cod fish fillets
  • 1/2 cup peeled and deveined small shrimp
  • 1 tablespoon cornstarch
  • salt and pepper

Recipe

  • 1 combine stock, vegetables and saffron in slow cooker; cover and cook on high 4-5 hours, adding 1 1/2 cups milk during the last 30 minutes.
  • 2 add seafood during the last 15 minutes.
  • 3 stir in combined remaining 1/2 cup milk and cornstarch, stirring, 2-3 minutes.
  • 4 season to taste with salt and pepper.
