Fennel And Rosemary Roasted Lamb

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 2
  • 1 fennel bulb, chopped and trimmed
  • 1 red spanish onion
  • 4 garlic cloves
  • 3 sprigs rosemary
  • 1 tablespoon olive oil, and extra for brushing
  • 450 g lamb fillets
  • sea salt
  • cracked pepper

Recipe

  • 1 preheat oven to 200â°c.
  • 2 place fennel, onion, garlic and rosemary in baking dish.
  • 3 add oil and toss to coat.
  • 4 cook 15 minutes.
  • 5 brush lamb with oil and season.
  • 6 heat non stick fry pan on medium.
  • 7 add lamb and sear each side for 3 minutes till browned.
  • 8 place in baking dish, cook further 15 to 20 minutes till fennel tender and lamb cooked through.
  • 9 slice lamb, toss with the vegetables and serve on a bed of baby spinach.
