Fennel And Rosemary Roasted Lamb

Ingredients

- 1 fennel bulb, chopped and trimmed
- 1 red spanish onion
- 4 garlic cloves
- 3 sprigs rosemary
- 1 tablespoon olive oil, and extra for brushing
- 450 g lamb fillets
- sea salt
- cracked pepper
Recipe
- 1 preheat oven to 200â°c.
- 2 place fennel, onion, garlic and rosemary in baking dish.
- 3 add oil and toss to coat.
- 4 cook 15 minutes.
- 5 brush lamb with oil and season.
- 6 heat non stick fry pan on medium.
- 7 add lamb and sear each side for 3 minutes till browned.
- 8 place in baking dish, cook further 15 to 20 minutes till fennel tender and lamb cooked through.
- 9 slice lamb, toss with the vegetables and serve on a bed of baby spinach.
