Fillet Of Sole With Wine & Walnuts

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 lb sole
  • ground red pepper (cayenne)
  • 1/2 cup chicken broth
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1/2 cup wine
  • 1/2 cup chopped walnuts
  • 2 tablespoons chopped parsley

Recipe

  • 1 heat oven to 325 degrees.
  • 2 put fish in single layer in oiled shallow baking dish.
  • 3 sprinkle with cayenne, add broth and wine.
  • 4 cover and bake 15 to 20 minutes, just until fish is opaque in thickest part.
  • 5 remove from oven, pour liquid into small saucepan.
  • 6 cover fish and keep warm while making sauce.
  • 7 boil liquid over moderately high heat, until only about 1/3 remains.
  • 8 stir in walnuts, parsley and butter/margarine.
  • 9 pour over fish and serve.
