Green Goddess Slaw

Ingredients

  • Servings: 6
  • 1 cup mayonnaise
  • 4 anchovy fillets
  • 2 green onions, green parts only
  • 2 tablespoons fresh parsley leaves
  • 2 tablespoons cider vinegar
  • 2 tablespoons chopped fresh chives
  • 6 cups shredded coleslaw mix (shredded cabbage and carrots)
  • salt & freshly ground black pepper

Recipe

  • 1 in a blender, combine all ingredients but the slaw mix.
  • 2 puree until smooth.
  • 3 transfer to a large bowl, add slaw mix and toss to combine.
  • 4 season, to taste, with salt and black pepper.
