Island Fried Fish

Total Time: 55 mins Preparation Time: 25 mins Cook Time: 30 mins

Ingredients

  • 3 lbs fish fillets
  • 1/2 cup soy sauce
  • 1/2 cup flour
  • 1/2 cup cornstarch
  • 1 cup milk
  • 1 egg
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 2 (20 ounce) cans pineapple chunks
  • 3/4 cup sugar
  • 2 cups cooking oil

Recipe

  • 1 wash fish, pat dry.
  • 2 cut into 1 1/2 inch squares.
  • 3 marinate in soy sauce for 20-30 min, turning once or twice.
  • 4 combine.flour, 1/2 c cornstarch, milk, egg, baking powder and seasonings.
  • 5 pour pineapple into saucepan, stir in sugar, heat through.
  • 6 pour 1 1/2 inches oil in a heavy skillet.
  • 7 heat to 375*, drain fish.
  • 8 dip quickly into batter, drain.
  • 9 drop into hot oil.
  • 10 keep temprature of oil constant.
  • 11 cook for 1-2 min or until crisp.
  • 12 remove to a paper towel lined pan, keep in warm oven.
  • 13 mix 1 tbsp cornstarch with 1/4 c water, add to pineapple mixture, cook until thickened.
  • 14 arrange pineapple sauce on platter, place fish on top carefully.
