Island Fried Fish

Ingredients
- 3 lbs fish fillets
- 1/2 cup soy sauce
- 1/2 cup flour
- 1/2 cup cornstarch
- 1 cup milk
- 1 egg
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1/4 teaspoon ground pepper
- 2 (20 ounce) cans pineapple chunks
- 3/4 cup sugar
- 2 cups cooking oil
Recipe
- 1 wash fish, pat dry.
- 2 cut into 1 1/2 inch squares.
- 3 marinate in soy sauce for 20-30 min, turning once or twice.
- 4 combine.flour, 1/2 c cornstarch, milk, egg, baking powder and seasonings.
- 5 pour pineapple into saucepan, stir in sugar, heat through.
- 6 pour 1 1/2 inches oil in a heavy skillet.
- 7 heat to 375*, drain fish.
- 8 dip quickly into batter, drain.
- 9 drop into hot oil.
- 10 keep temprature of oil constant.
- 11 cook for 1-2 min or until crisp.
- 12 remove to a paper towel lined pan, keep in warm oven.
- 13 mix 1 tbsp cornstarch with 1/4 c water, add to pineapple mixture, cook until thickened.
- 14 arrange pineapple sauce on platter, place fish on top carefully.
