Lemon Butter Curry Catfish

- 2 lbs catfish fillets
- 1/2 teaspoon salt
- ground pepper
- 2 cups cooked rice
- 1/2 teaspoon salt
- 2 teaspoons grated onions
- 1 teaspoon curry powder
- 6 thin lemon slices
- 4 tablespoons butter
- chopped fresh parsley
Recipe
- 1 rinse the fish and pat dry, then cut into bite-size pieces. arrange in a well-greased baking dish and season with salt and pepper.
- 2 stir together the rice, onion, and curry powder and spread over the fish. top with lemon slices and dot with butter.
- 3 bake at 350 degrees until fish flakes easily, about 25 to 35 minutes. uncover for the last few minutes for any moisture to evaporate. sprinkle with parsley and serve.
