Lori's Oil Poached Fish

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 (8 ounce) firm fleshed fish fillets
  • olive oil (as needed)
  • 2 garlic cloves (minced)
  • 3 tablespoons parsley (mnced)
  • salt & fresh ground pepper (to taste)
  • lemon wedge

Recipe

  • 1 rinse and dry fish.
  • 2 pour enough oil in a deep skillet to cover fish.
  • 3 add the garlic and parsley. bring to a gentle simmer.
  • 4 add fish. poach over low heat for 15 minutes.
  • 5 the oil should not be bubbling!
  • 6 remove fish with a slotted spoon to paper towels. dab off excess oil, if any.
  • 7 place on plates. season. top with a little of the "green oil".
  • 8 serve with lemons.
