Orange Roughy With Basil And Peppers

Ingredients

  • Servings: 4
  • 2 red bell peppers or 2 green bell peppers, seeded and julienne sliced
  • 1 small onion, thinly sliced
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon dried basil leaves
  • 1/4 teaspoon pepper, ground
  • 1 lb orange roughy fillet
  • 1 dash paprika
  • 1 lemon, cut in wedges

Recipe

  • 1 layer peppers and onion over bottom of a shallow 12 x 7"
  • 2 microwave-safe baking dish.
  • 3 sprinkle with half of the basil and half the pepper.
  • 4 cover dish with plastic wrap, leaving one corner open to vent. microwave on high (100%) setting for 2-3 minutes, or until vegetables are partially tender.
  • 5 arrange fillets over vegetables, with thickest portions tow ard outside, and sprinkle with remaining basil and pepper.
  • 6 dust lightly with paprika.
  • 7 cover with vented plastic wrap and microwave 7-9 minutes longer, or until fish flakes easily with a fork, rotating dish 1/2 turn after 4 minutes.
  • 8 let stand, covered, 3 minutes before serving with lemon wedges.
