Lamb With Apricot Glaze

Ingredients

  • Servings: 2
  • 500 g lamb fillets
  • 60 g butter
  • 1 onion, sliced
  • 2 teaspoons curry powder
  • 2 teaspoons ginger, grated
  • 2 tablespoons apricot jam
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice

Recipe

  • 1 melt butter in a pan, add onion, curry powder, ginger, jam, soy sauce and lemon juice, stir over low heat until the jam has melted.
  • 2 place lamb in a greased shallow ovenproof casserole in a single layer, pour sauce over, bake uncovered in a moderate oven about 25 minutes or until lamb is tender.
