Lamb With Apricot Glaze

Ingredients

- 500 g lamb fillets
- 60 g butter
- 1 onion, sliced
- 2 teaspoons curry powder
- 2 teaspoons ginger, grated
- 2 tablespoons apricot jam
- 2 tablespoons soy sauce
- 1 tablespoon lemon juice
Recipe
- 1 melt butter in a pan, add onion, curry powder, ginger, jam, soy sauce and lemon juice, stir over low heat until the jam has melted.
- 2 place lamb in a greased shallow ovenproof casserole in a single layer, pour sauce over, bake uncovered in a moderate oven about 25 minutes or until lamb is tender.
