Poached Salmon With Spinach And Cheese

Ingredients
- Servings: 4
- 1 1/2 cups water
- 1/2 cup wine
- 1 bay leaf
- 2 tablespoons chopped green onions
- 1 lb salmon fillet, cut into 4 pieces (or fish that your family prefers)
- 10 ounces frozen chopped spinach, cooked and drained (i prefer fresh spinach-cook and drain 12-16 oz.-it cooks down and my kids love spinach so i cook the)
- 1/4 teaspoon ground nutmeg
- 1/2 cup shredded nonfat mozzarella cheese
Recipe
- 1 combine water, wine, bay leaf and green onion in a large skillet.
- 2 bring to a boil over high heat.
- 3 carefully add fish and return to a boil. reduce heat to low, cover and simmer 8 to 10 minutes, until fish flakes easily with a fork.
- 4 remove fish and pat dry.
- 5 preheat broiler on high heat. line a baking sheet with foil and spray with cooking spray.
- 6 sprinkle spinach with nutmeg and mix lightly. arrange fish on baking sheet, top with spinach and sprinkle with cheese.
- 7 broil 1 to 2 minutes, until cheese is melted and lightly browned.
- 8 serve immediately and enjoy.
