Ingredients

- 4 chicken breast fillets
- 1/2 bunch basil
- 3/4 cup goat cheese
- 3 tablespoons olive oil
- salt and pepper
- 1/2 iceberg lettuce
- 1/2 lemon juice
- 1 teaspoon honey
- 3 tablespoons olive oil
Recipe
- 1 wash and dry the chicken breasts
- 2 cut a pocket in the side of each breast.
- 3 pick and roughly chop the basil leaves.
- 4 mix with the goat cheese and season with salt and pepper.
- 5 stuff the chicken breasts with the mixture and secure with toothpicks.
- 6 season with salt and pepper, heat the oil and brown on both sides .
- 7 reduce the heat and cook over a low heat for 20 minutes turning every so often.
