Fillet Or Flounder Or Sole In Orange Sauce

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 lb fillets of sole or 1 lb flounder
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2/3 tablespoon unsalted butter (divided)
  • 2 tablespoons finely chopped onions (divided)
  • 3 tablespoons frozen orange juice concentrate
  • 1/2 cup dry wine

Recipe

  • 1 dry fish on paper towels.
  • 2 mix flour, salt and pepper together.
  • 3 dip fish slices in seasoned flour to coat lightly.
  • 4 melt 2 tblsp butter in large skilet.
  • 5 add onion and saute over medium heat until they are soft but not browned.
  • 6 leave onion in pan.
  • 7 add fish filets and cook until lightly browned, turning once, 2 to 3 minutes on each side.
  • 8 do not crowd fish in pan.
  • 9 repeat steps 2 and 3 for larger portions of fish.
  • 10 remove fish to a micro safe dish.
  • 11 lower heat and melt 2 tablespoons butter, add orange juice concentrate and wine.
  • 12 stir to combine and heat through.
  • 13 pour sauce over fish.
  • 14 microwave few minutes to reheat.
