Fish, Tomato And Spinach Casserole

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs flounder or 1 1/2 lbs other fish fillets
  • 1/4 cup wine
  • 1 large onion, thinly sliced
  • 2 large tomatoes, sliced
  • 1 (10 ounce) package frozen spinach, chopped, thawed and drained
  • 1 (9 ounce) package frozen creamed spinach, thawed
  • 1/4-1/2 cup parmesan cheese, grated

Recipe

  • 1 place fish in the bottom of a 7 x 11 inch casserole dish.
  • 2 pour wine over the fish.
  • 3 cover fish with the onion slices, then tomato slices.
  • 4 combine chopped spinach and creamed spinach and spoon over the tomatoes.
  • 5 sprinkle parmesan cheese on top.
  • 6 cover with plastic wrap and microwave on high for approximately 10 minutes or until fish is opaque in the middle, or bake, uncovered, in a preheated 350 degree f. oven for 30 minutes, until fish is opaque and flakes easily with a fork.
