Golden Flounder

Ingredients

  • Servings: 4
  • 4 flounder fillets (double fillets)
  • 2 eggs, separated
  • 1 pinch salt
  • 1 pinch pepper
  • 1 cup olive oil
  • 1 tablespoon lemon juice

Recipe

  • 1 place the egg yolks in a food processor or blender. blend in the salt and pepper. pour the oil through the funnel in a thin, steady stream with the machine running. add in the lemon juice. beat egg whites until stiff but not dry. fold in the yolk mixture. broil the fish about 2 inches from the heat source for about 6-10 mins, depending on the thickness of the fillets. spead the sauce over the fillets and broil 3-5 minutes longer or until the sauce puffs and browns lightly.
