Heirloom Tomato Fish Soup

Ingredients
- 10 ounces fish fillets
- 3 heirloom tomatoes
- 1/2 teaspoon borsari salt
- 1/2 teaspoon blackened cajun spices
- 1 poblano pepper (optional)
- 6 small potatoes (optional)
- 1 cup leafy greens (optional)
Recipe
- 1 slice the tomatoes into quarters.
- 2 place fish and tomatoes in big oven-safe pot.
- 3 sprinkle with salt and spice. the borsari salt is strong, so use half of what you would use for regular salt.
- 4 broil or bake for 10 minutes. add any optional ingredients except leafy greens. create your own favorite optional ingredients.
- 5 continue cooking until fish is done and tomatoes have turned into a mushy liquid, approximately 10 minutes.
- 6 add leafy greens and continue cooking for a couple of minutes until they are wilted.
