Oriental Chicken Noodle Soup

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 cups chicken stock
  • 4 cups water
  • 2 single chicken breast fillets, about 3/4 of a pound
  • 1 celery rib
  • 1 medium carrot
  • 1/4 lb thin fresh egg noodles
  • 1 tablespoon light soy sauce
  • 4 green onions, chopped

Recipe

  • 1 combine stock, water and chicken in large dutch oven.
  • 2 bring to boil and boil, uncovered, until chicken is tender.
  • 3 remove chicken from pot, chop finely.
  • 4 cut celery and carrot into thin strips, stir into pot, bring to boil, boil uncovered until veggies are just soft.
  • 5 stir in noodles, bring back to boil and boil uncovered for a further 2 minutes.
  • 6 stir in chicken, soy sauce and onion, stir over heat until chicken is heated through.
