Pasta A Picchi Pacchi

Total Time: 30 mins Preparation Time: 30 mins

Ingredients

  • Servings: 4
  • 3 tablespoons olive oil
  • 1 large onion, chopped fine
  • 3 garlic cloves, chopped fine
  • 8 fresh basil leaves, shredded
  • 1 (2 ounce) can anchovy fillets, drained, and chopped
  • 5 medium tomatoes, seeded and chopped
  • salt and pepper
  • 1 lb spaghetti or 1 lb bucatini pasta

Recipe

  • 1 heat oil in a pan and saute onion over medium heat until soft.
  • 2 add the garlic and saute until beginning to color. don't over cook, it will get bitter.
  • 3 add tomatoes and bring to a boil.
  • 4 simmer for 20 minute.
  • 5 cook pasta as directed on package until al dente and drain.
  • 6 add basil and anchovies the the sauce the last few minutes of cooking and stir in well.
  • 7 toss with hot cooked pasta.
