Quick & Easy Italian-style Cod Fillets

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 3
  • 1 1/2 lbs fresh cod fish fillets
  • 2 cans diced canned tomatoes with balsamic vinegar, olive oil and basil
  • 2 tablespoons minced garlic
  • grated italian cheese (parmesan, romano, asiago, grana padano)
  • salt & pepper

Recipe

  • 1 mix together the canned tomatoes and garlic.
  • 2 spread 1/2 of the tomato/garlic mixture on the bottom of a large frying pan.
  • 3 place the fish fillets on top of the tomatoes.
  • 4 spread the remaining mixture over the fillets.
  • 5 sprinkle with salt, pepper and italian cheese.
  • 6 bring to a boil, lower heat and simmer until fillets flake easily with a fork.
  • 7 serve with rice or pasta.
  • 8 enjoy!
