Quick & Easy Poached Salmon

Ingredients

- 1 skin-on salmon fillet
- water (to cover)
- kosher salt
- pepper
Recipe
- 1 place filet, skin side down, in a small stock pot.
- 2 pour enough water over to cover the salmon by about two inches.
- 3 place pot on high heat until just beginning to boil.
- 4 remove salmon from water and pat dry.
- 5 sprinkle with kosher salt and pepper to taste.
- 6 this goes great with a little garlic mayonnaise or a vinaigrette.
