Curried Chicken And Broccoli Sauce For Pasta

Ingredients

  • Servings: 4
  • 1 large onion, chopped
  • 1 garlic clove, crushed
  • 2 tablespoons vegetable oil
  • 1 tablespoon curry powder (or to taste)
  • 500 g chicken breast fillets, sliced
  • 1/2 cup red capsicum, sliced
  • 1 cup tomato sauce (the plain one for pasta)
  • 1 (400 ml) can light coconut milk
  • 1/2 cup chicken stock
  • 1 lemon, zest of
  • 1 cup broccoli floret, cooked
  • 1/4 cup green onion
  • salt and pepper

Recipe

  • 1 cook the onion and garlic in the oil until softened.
  • 2 add the curry powder and fry for about 1 minute.
  • 3 add the chicken and cook until all the chicken changes colour.
  • 4 add the capsicum and cook for a couple of minutes.
  • 5 add the tomato sauce, coconut milk, stock, zest and cook for about 5 minutes.
  • 6 stir in the broccoli and onions and and heat through gently.
  • 7 taste for seasonings.
  • 8 serve at once over the cooked pasta of your choice.
