Curried Chicken And Broccoli Sauce For Pasta

Ingredients
- Servings: 4
- 1 large onion, chopped
- 1 garlic clove, crushed
- 2 tablespoons vegetable oil
- 1 tablespoon curry powder (or to taste)
- 500 g chicken breast fillets, sliced
- 1/2 cup red capsicum, sliced
- 1 cup tomato sauce (the plain one for pasta)
- 1 (400 ml) can light coconut milk
- 1/2 cup chicken stock
- 1 lemon, zest of
- 1 cup broccoli floret, cooked
- 1/4 cup green onion
- salt and pepper
Recipe
- 1 cook the onion and garlic in the oil until softened.
- 2 add the curry powder and fry for about 1 minute.
- 3 add the chicken and cook until all the chicken changes colour.
- 4 add the capsicum and cook for a couple of minutes.
- 5 add the tomato sauce, coconut milk, stock, zest and cook for about 5 minutes.
- 6 stir in the broccoli and onions and and heat through gently.
- 7 taste for seasonings.
- 8 serve at once over the cooked pasta of your choice.
