Halibut Florentine

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 lb firm fish fillet (preferably halibut)
  • 3 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • salt & pepper
  • 1/2 cup parmesan cheese (divided)
  • 10 ounces frozen spinach (drained & squeezed)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup breadcrumbs (dry)
  • 1 teaspoon old bay seasoning

Recipe

  • 1 melt butter in sauce pan.
  • 2 add flour.
  • 3 add milk and stir until thick to make a sauce.
  • 4 add 1/4 cup of the parmesan cheese and stir until melted.
  • 5 add salt and pepper to sauce to taste.
  • 6 place spinach in bottom of casserole dish.
  • 7 top with fish fillet(s).
  • 8 cover with sauce.
  • 9 combine mozzarella, 1/4 cup of parmesan, cheddar cheese, bread crumbs and old bay seasoning.
  • 10 sprinkle over top of sauce.
  • 11 bake at 350°f for 20-30 minutes (no need to cover with foil).
