Halibut With Jager Sauce

Ingredients
- Servings: 4
- 1 lb halibut fillet
- 1 cup all-purpose flour
- salt & pepper
- 1/4 cup vegetable oil or 1/4 cup canola oil
- 2 tablespoons olive oil
- 1/4 cup green onion (sliced)
- 1 garlic clove
- 1 1/2 cups mushrooms
- 1/2 teaspoon thyme
- 1/2 cup heavy cream
- 2 tablespoons red wine (deglaze the pan)
Recipe
- 1 salt and pepper flour to taste.
- 2 dredge halibut in flour.
- 3 fry in oil until golden brown.
- 4 remove and place in oven to keep warm.
- 5 fry green onions in olive oil until they are slightly brown.
- 6 add garlic and mushrooms and cook until mushrooms are tender.
- 7 deglaze with red wine.
- 8 add heavy cream and simmer until sauce thinkens so to coat a metal spoon.
