Lamb.....lamb Fillets With Apple And Almonds

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 2 lbs lamb tenderloin
  • 1 large apple
  • 2 tablespoons chopped almonds
  • 1 teaspoon sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/4 cup olive oil
  • 1/2 cup red wine
  • 1 cup stock

Recipe

  • 1 slice tenderloin into 6 pieces.
  • 2 peel,core and chop apple.
  • 3 combine apple, almonds, sugar, and cinnamon; mix well.
  • 4 make a horizontal slash in the center of each tenderloin with out cutting through.
  • 5 stuff with apple mixture.
  • 6 press meat together and secure with string or skewers.
  • 7 combine garlic power,salt and pepper.
  • 8 rub all over the tenderloin.
  • 9 heat oil in a deep skillet, brown on all sides.
  • 10 add wine and stock, bring to a boil.
  • 11 reduce to a simmer for 1 hour turning meat every 15 minutes.
  • 12 serve.
