Lamb.....lamb Fillets With Apple And Almonds

Ingredients
- Servings: 4
- 2 lbs lamb tenderloin
- 1 large apple
- 2 tablespoons chopped almonds
- 1 teaspoon sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon ground pepper
- 1/4 cup olive oil
- 1/2 cup red wine
- 1 cup stock
Recipe
- 1 slice tenderloin into 6 pieces.
- 2 peel,core and chop apple.
- 3 combine apple, almonds, sugar, and cinnamon; mix well.
- 4 make a horizontal slash in the center of each tenderloin with out cutting through.
- 5 stuff with apple mixture.
- 6 press meat together and secure with string or skewers.
- 7 combine garlic power,salt and pepper.
- 8 rub all over the tenderloin.
- 9 heat oil in a deep skillet, brown on all sides.
- 10 add wine and stock, bring to a boil.
- 11 reduce to a simmer for 1 hour turning meat every 15 minutes.
- 12 serve.
