- 600 g lamb fillets, halved (2)
- 8 slices pancetta
- 4 sprigs lemon thyme
- 4 garlic cloves
- 250 g cherry tomatoes
- 1 -2 tablespoon olive oil
- olive oil, for brushing
- sea salt
- cracked pepper
- kitchen string
Recipe
- 1 preheat oven to 200c (390f).
- 2 rub lamb with salt and pepper, brush with oil, top with pancetta and thyme and secure with kitchen string.
- 3 add oil to a baking dish and toss tomatoes and garlic. add the lamb and roast in the oven for 20 minutes or until cooked through.
