Lemon Thyme Lamb

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 600 g lamb fillets, halved (2)
  • 8 slices pancetta
  • 4 sprigs lemon thyme
  • 4 garlic cloves
  • 250 g cherry tomatoes
  • 1 -2 tablespoon olive oil
  • olive oil, for brushing
  • sea salt
  • cracked pepper
  • kitchen string

Recipe

  • 1 preheat oven to 200c (390f).
  • 2 rub lamb with salt and pepper, brush with oil, top with pancetta and thyme and secure with kitchen string.
  • 3 add oil to a baking dish and toss tomatoes and garlic. add the lamb and roast in the oven for 20 minutes or until cooked through.
