Lori's Cod Bake

Ingredients
- Servings: 6
- 2 lbs cod fish fillets
- 1 bay leaf
- wine, as needed
- 1/2 bunch collard greens (shredded)
- 8 potatoes (peeled, sliced thin)
- 1/2 cup olive oil
- 4 large onions (sliced thin)
- 3 tomatoes (chopped)
- salt & fresh ground pepper (to taste)
- 1/2 cup olive oil
Recipe
- 1 heat oven 350.
- 2 place cod in a deep skillet.
- 3 ad bay leaf. cover with wine. poach cod until just cooked. drain. flake. set aside.
- 4 boil potatoes and greens until tender. drain.
- 5 heat oil in a skillet.
- 6 add onions. saute 10 minutes or until golden.
- 7 add tomatoes. saute 5 minutes. season.
- 8 in a sprayed 9x13 baking dish, layer the potato mix, cod, and onion mix in 2 layers.
- 9 pour oil over top.
- 10 bake 1 hour.
