Lori's Cod Bake

Total Time: 2 hrs Preparation Time: 30 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 6
  • 2 lbs cod fish fillets
  • 1 bay leaf
  • wine, as needed
  • 1/2 bunch collard greens (shredded)
  • 8 potatoes (peeled, sliced thin)
  • 1/2 cup olive oil
  • 4 large onions (sliced thin)
  • 3 tomatoes (chopped)
  • salt & fresh ground pepper (to taste)
  • 1/2 cup olive oil

Recipe

  • 1 heat oven 350.
  • 2 place cod in a deep skillet.
  • 3 ad bay leaf. cover with wine. poach cod until just cooked. drain. flake. set aside.
  • 4 boil potatoes and greens until tender. drain.
  • 5 heat oil in a skillet.
  • 6 add onions. saute 10 minutes or until golden.
  • 7 add tomatoes. saute 5 minutes. season.
  • 8 in a sprayed 9x13 baking dish, layer the potato mix, cod, and onion mix in 2 layers.
  • 9 pour oil over top.
  • 10 bake 1 hour.
