Lori's Garlic Lemon Oven-baked Salmon

Ingredients

- 1 lb salmon fillet, about 1 pound
- 1 teaspoon olive oil, if that, you just need a very thin film
- 4 fresh garlic cloves, minced
- 1/2 teaspoon fresh cracked pepper
- 1/2 teaspoon kosher salt (a bit more if fish is skinned, apply both sides)
- 1 -2 teaspoon fresh lemon juice
- fresh herb, chopped
Recipe
- 1 heat the oven to 200°f (that's right -- 200 degrees).
- 2 chop up the garlic or other herbs and mix it with the salt and pepper.
- 3 smear the oil on an oven-proof serving platter, and place fish on top. if the filet is skinned, put some salt and pepper on both sides, otherwise just put the fish skin side down and season the top. pour the lemon juice on fish after salt & pepper and garlic have been applied.
- 4 bake for about 40 to 45 minutes, until salmon flakes. you won't believe how good it is. i usually serve it with a sort of homemade tartar sauce mixing mayonnaise, lemon zest and juice, some of the same herb i used on the fish, capers, and a very small amount of hot sauce. i do it to taste.
