Lori's Fish With Bean Puree

Total Time: 9 hrs 30 mins Preparation Time: 8 hrs Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 4
  • 1 cup dried bean
  • 1 tablespoon olive oil
  • 1 garlic clove (minced)
  • 1 shallot (minced)
  • 1 teaspoon thyme (minced)
  • 2 anchovies (rinsed, minced)
  • 1/2 cup fish stock
  • 1 lb fish fillet (any , in chunks)
  • 1 cup seasoned flour
  • 1/4 cup olive oil
  • 1 green onion (minced)
  • fresh thyme sprig

Recipe

  • 1 soak beans 8 hours.
  • 2 drain. place in a pot. cover with water. bring to a boil. reduce. cover. simmer 1 hour. drain.
  • 3 in a skillet heat oil.
  • 4 add the garlic, shallots, thyme and anchovies. saute 3 minutes.
  • 5 add broth and beans. saute 3 more minutes.
  • 6 puree. place in a saucepan.
  • 7 clean out skillet.
  • 8 dredge fish in flour to coat.
  • 9 heat oil in skillet.
  • 10 add fish. saute until golden on both sides (sbout 3 minutes each).
  • 11 re-heat puree. place on plates. top with fish. garnish with onions and thyme.
  • 12 yum!
