Lori's Fish With Bean Puree

Ingredients

- 1 cup dried bean
- 1 tablespoon olive oil
- 1 garlic clove (minced)
- 1 shallot (minced)
- 1 teaspoon thyme (minced)
- 2 anchovies (rinsed, minced)
- 1/2 cup fish stock
- 1 lb fish fillet (any , in chunks)
- 1 cup seasoned flour
- 1/4 cup olive oil
- 1 green onion (minced)
- fresh thyme sprig
Recipe
- 1 soak beans 8 hours.
- 2 drain. place in a pot. cover with water. bring to a boil. reduce. cover. simmer 1 hour. drain.
- 3 in a skillet heat oil.
- 4 add the garlic, shallots, thyme and anchovies. saute 3 minutes.
- 5 add broth and beans. saute 3 more minutes.
- 6 puree. place in a saucepan.
- 7 clean out skillet.
- 8 dredge fish in flour to coat.
- 9 heat oil in skillet.
- 10 add fish. saute until golden on both sides (sbout 3 minutes each).
- 11 re-heat puree. place on plates. top with fish. garnish with onions and thyme.
