Maple Planked Salmon With Spice Rub

Ingredients

- 2 teaspoons paprika
- 1 teaspoon chili powder
- 1 teaspoon dried ancho chile powder
- 1/2 teaspoon brown sugar
- 1/2 teaspoon cumin
- 2 teaspoons kosher salt
- 24 ounces salmon fillets
- 2 teaspoons maple syrup
Recipe
- 1 combine first five ingredients in a small bowl.
- 2 sprinkle fish with salt and rub with the spice mixture.
- 3 heat grill to 350 to 400 degrees.
- 4 place soaked plank on hot grill and close lid.
- 5 flip plank over after 3 minutes and continue to heat for 3 more.
- 6 when light smoke develops place salmon fillets on hot plank, close lid, and cook for 10-15 minutes or until medium rare (or desired doneness).
- 7 drizzle fish with maple syrup and serve.
- 8 remember salmon will continue to cook after removing the plank from the grill.
