Ingredients
- Servings: 4
- 2 tablespoons olive oil
- 1 onion, cut into wedges
- 1 garlic clove, crushed
- 500 g chicken breast fillets, cut into pieces and lightly dusted with plain flour
- 400 g chopped tomatoes
- 500 g frozen broccoli carrots cauliflower mix
- 10 kalamata olives, pitted
- 1 tablespoon fresh parsley, chopped
Recipe
- 1 heat oil in a large frying pan and fry onion and garlic for 1 minute, move to side of pan.
- 2 add chicken pieces and fry until golden brown. stir in tomatoes and vegetables.
- 3 cover and simmer for 15-20 minutes stirring occasionally. stir in olives, and garnish with parsley. serve with couscous, pasta, or rice.
