Ingredients

- 1 egg (beaten)
- 1/2 cup flour
- 3 teaspoons paprika
- 1 teaspoon salt
- 1 teaspoon fresh cracked pepper
- 1 lb pollock fillet
- 1/3 cup walnuts (chopped, toasted)
- 1 1/2 cups spinach (packed)
- 3 tablespoons lemon juice
- 1/4 cup olive oil
- salt & fresh ground pepper (to taste)
- 1 teaspoon paprika
- 1 tablespoon olive oil
Recipe
- 1 place egg in a bowl.
- 2 combine the flour, paprika, salt and pepper.
- 3 dip fish in egg then flour to coat.
- 4 place on a baking rack. chill 20 minutes.
- 5 meanwhile, puree the walnuts, oil, spinach lemon juice, salt, pepper and paprika.
- 6 heat oil in a skillet.
- 7 add fish. saute 3 minutes each side.
- 8 top with sauce.
