Oven Fried Snapper

Ingredients
- Servings: 4
- 2 lbs red snapper or 2 lbs perch fillets
- 1/2 cup oil
- 3 cloves garlic, pressed
- 1 teaspoon salt
- 1 cup parmesan cheese
- 1 cup dry breadcrumbs
Recipe
- 1 rinse fish with cold water, pat dry with paper towels.
- 2 cut fish into four serving size portions.
- 3 combine oil, salt and garlic in oblong baking dish.
- 4 place fish in mixture and let marinate 10 minutes.
- 5 turn and let marinate another 10 minutes.
- 6 remove fish from marinade.
- 7 roll in cheese, then crumbs.
- 8 place on well-greased cookie sheet.
- 9 bake at 500f for 12-15 minutes or until fish flakes easily.
