Poached Salmon In Wine Sauce

Ingredients

- 2 cups dry wine
- 1 cup clam juice
- 1 cup water
- 1 teaspoon peppercorn
- 1 teaspoon kosher salt
- 1 lemon, juice of
- 1 teaspoon dried tarragon
- 4 (6 ounce) salmon fillets
Recipe
- 1 divide all the ingredients except the salmon between 2 skillets.
- 2 if you do not have one big enough to hold all the salmon.
