Poached Salmon Spinach Salad

Ingredients
- Servings: 4
- 2 tablespoons extra virgin olive oil
- 1/2 lb fresh spinach, cleaned
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper, freshly ground
- 1/2 cup yellow onion, chopped
- 3 fresh tomatoes, peeled, seeded, and cut into 1/2-inch pieces
- 2 (4 ounce) salmon fillets, poached (leftovers from poached salmon with cucumber dill sauce)
- 1 tablespoon flat leaf parsley, coarsely chopped (optional)
Recipe
- 1 in a skillet, heat 1 tablespoon of the oil over medium heat.
- 2 when hot, saute the spinach for 1 1/2 minutes. mix in the salt & pepper and divide among 4 plates.
- 3 heat the remaining tablespoon of oil in the skillet.
- 4 saute the onion and tomatoes over medium heat until the onion is tender, about 5 - 6 minutes.
- 5 arrange the salmon on the spinach and top with the tomatoes and onion. garnish with parsley, if using.
