Poached Salmon Spinach Salad

Total Time: 10 mins Preparation Time: 3 mins Cook Time: 7 mins

Ingredients

  • Servings: 4
  • 2 tablespoons extra virgin olive oil
  • 1/2 lb fresh spinach, cleaned
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper, freshly ground
  • 1/2 cup yellow onion, chopped
  • 3 fresh tomatoes, peeled, seeded, and cut into 1/2-inch pieces
  • 2 (4 ounce) salmon fillets, poached (leftovers from poached salmon with cucumber dill sauce)
  • 1 tablespoon flat leaf parsley, coarsely chopped (optional)

Recipe

  • 1 in a skillet, heat 1 tablespoon of the oil over medium heat.
  • 2 when hot, saute the spinach for 1 1/2 minutes. mix in the salt & pepper and divide among 4 plates.
  • 3 heat the remaining tablespoon of oil in the skillet.
  • 4 saute the onion and tomatoes over medium heat until the onion is tender, about 5 - 6 minutes.
  • 5 arrange the salmon on the spinach and top with the tomatoes and onion. garnish with parsley, if using.
