Poached Salmon With Peach And Mango Salsa

Ingredients

- 4 salmon fillets (8 ounces each)
- 2 cups water
- 4 bay leaves
- 1 pinch salt
- 1 pinch freshly-ground pepper
- 1 lemon, juice of
- 3 peaches, pitted
- 1 mango, pitted and peeled
- 1/2 cup cilantro leaf
- 1/4 red onion, peeled
- 1 tablespoon sugar
- 1 pinch salt
- 1 pinch freshly-ground pepper
- 1 lime, juice of
- 1/4 cup vegetable oil
Recipe
- 1 place salmon, water, bay leaves, salt, pepper, and lemon juice in 12-inch skillet.
