Poached Salmon With Peach And Mango Salsa

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 4 salmon fillets (8 ounces each)
  • 2 cups water
  • 4 bay leaves
  • 1 pinch salt
  • 1 pinch freshly-ground pepper
  • 1 lemon, juice of
  • 3 peaches, pitted
  • 1 mango, pitted and peeled
  • 1/2 cup cilantro leaf
  • 1/4 red onion, peeled
  • 1 tablespoon sugar
  • 1 pinch salt
  • 1 pinch freshly-ground pepper
  • 1 lime, juice of
  • 1/4 cup vegetable oil

Recipe

  • 1 place salmon, water, bay leaves, salt, pepper, and lemon juice in 12-inch skillet.
