Roasted Green Beans

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 lb fresh green beans, tipped
  • 1/4 cup extra virgin olive oil
  • 3 garlic cloves, minced
  • 3 fresh thyme sprigs, halved
  • 3 anchovy fillets, mashed
  • 2 -3 teaspoons lemon juice
  • 1 lemon, zest of
  • salt & pepper

Recipe

  • 1 preheat oven to 450 degrees.
  • 2 in a large baking dish, toss the green beans with the olive oil, garlic & thyme sprigs.
  • 3 add salt & pepper to taste.
  • 4 spread the green beans in a single layer & roast for about 15 minutes, tossing occasionally, until tender and lightly browned.
  • 5 discard the thyme sprigs & transfer the green beans to a bowl.
  • 6 add the anchovies, lemon juice & lemon zest.
  • 7 toss well to coat.
