Roasted Green Beans

Ingredients

- 1 lb fresh green beans, tipped
- 1/4 cup extra virgin olive oil
- 3 garlic cloves, minced
- 3 fresh thyme sprigs, halved
- 3 anchovy fillets, mashed
- 2 -3 teaspoons lemon juice
- 1 lemon, zest of
- salt & pepper
Recipe
- 1 preheat oven to 450 degrees.
- 2 in a large baking dish, toss the green beans with the olive oil, garlic & thyme sprigs.
- 3 add salt & pepper to taste.
- 4 spread the green beans in a single layer & roast for about 15 minutes, tossing occasionally, until tender and lightly browned.
- 5 discard the thyme sprigs & transfer the green beans to a bowl.
- 6 add the anchovies, lemon juice & lemon zest.
- 7 toss well to coat.
