Slimming World Friendly Smoky One Tray Lamb And Vegetables

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 737 g new potatoes (thinly sliced)
  • 3 mixed peppers (deseeded and sliced)
  • 1 aubergine (cut into chunks)
  • 1 courgette (cut into chunks)
  • 7 ounces baby onions (peeled and quartered)
  • 3 small rosemary sprigs
  • 3 bay leaves
  • 2 teaspoons smoked paprika
  • 1 small garlic (cut in half horizontally)
  • low-fat cooking spray
  • salt and pepper
  • 800 g lamb tenderloin, fillet (all visible fat removed cut into 1 inch)

Recipe

  • 1 preheat oven to gas mark 7, add all ingredient except for the lamb and spray with low fat cooking spray season to taste.
  • 2 roast for 10 minutes. shake the tray and add the lamb pieces. cook for a further 10 minutes. turn down oven to gas mark 4 and bake for 20 minutes shaking occasionally.
  • 3 discard bay leaves and squeeze garlic out of the halved bulbs, mix with the meat and veg. divide into 4 bowls and serve.
