Slimming World Friendly Smoky One Tray Lamb And Vegetables

Ingredients
- Servings: 4
- 737 g new potatoes (thinly sliced)
- 3 mixed peppers (deseeded and sliced)
- 1 aubergine (cut into chunks)
- 1 courgette (cut into chunks)
- 7 ounces baby onions (peeled and quartered)
- 3 small rosemary sprigs
- 3 bay leaves
- 2 teaspoons smoked paprika
- 1 small garlic (cut in half horizontally)
- low-fat cooking spray
- salt and pepper
- 800 g lamb tenderloin, fillet (all visible fat removed cut into 1 inch)
Recipe
- 1 preheat oven to gas mark 7, add all ingredient except for the lamb and spray with low fat cooking spray season to taste.
- 2 roast for 10 minutes. shake the tray and add the lamb pieces. cook for a further 10 minutes. turn down oven to gas mark 4 and bake for 20 minutes shaking occasionally.
- 3 discard bay leaves and squeeze garlic out of the halved bulbs, mix with the meat and veg. divide into 4 bowls and serve.
