Filet Of Fish Stuffed With Spinach And Feta

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 flounder fillets (talipia works great too)
  • 1 (10 ounce) package frozen spinach, thawed and drained
  • 1 tablespoon extra virgin olive oil
  • 1 garlic clove, minced
  • 1/4 cup chopped onion
  • 2 ounces crumbled feta cheese
  • 1 tablespoon grated parmesan cheese
  • 1/8 teaspoon nutmeg
  • 1 tablespoon paprika
  • 1 tablespoon oregano
  • salt and pepper

Recipe

  • 1 heat oil in saucepan.
  • 2 add garlic and onion and saute for a minute or two.
  • 3 add spinach to pan.
  • 4 saute until all water evaporates. about 3 minutes.
  • 5 take off heat. add feta and parmesean. season with nutmeg, salt and pepper.
  • 6 set aside to cool.
  • 7 season fish with salt and pepper.
  • 8 place about 2 tablespoons of filling onto the center of each piece of fish.
  • 9 roll fish aroung stuffing.
  • 10 place fish seam side down into baking dish.
  • 11 drizzle with olive oil (if desired).
  • 12 sprinkle fish with oregano and paprika.
  • 13 bake at 400 degrees uncovered for 30 minutes or until fish flakes easily with a fork.
