Quick & Simple Cajun Fish

Ingredients
- Servings: 4
- 1 teaspoon vegetable oil
- 1 green pepper, diced
- 2 stalks celery, diced
- 1/2 teaspoon dried oregano
- 1 (10 3/4 ounce) can condensed tomato soup
- 1/3 cup water
- 1 garlic clove, minced
- salt and pepper
- 1 lb cod fish fillet
- cajun seasoning or seafood seasoning, to taste
Recipe
- 1 sprinkle fish fillets with seafood or cajun seasoning on both sides and set aside.
- 2 heat vegetable oil in skillet over medium/medium high heat.
- 3 add green pepper and celery and cook until tender-crisp, stirring often.
- 4 add minced garlic and stir until fragrant.
- 5 add the condensed soup, water, salt and pepper.
- 6 heat to a boil.
- 7 place fish into the tomato soup mixture, and reduce heat to low.
- 8 cover and simmer for 5 or 6 minutes or until fish flakes easily with a fork.
- 9 can be served over rice, or in bowls with crusty bread.
