Go Go Greek Tilapia

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 1/2 lbs tilapia fillets
  • 2 lemons
  • 1/2 tablespoon olive oil
  • salt and pepper
  • 1 (6 ounce) package fresh baby spinach
  • 1 (16 ounce) jar prepared pasta sauce (your favorite marinara sauce)
  • 1 (6 ounce) package crumbled feta cheese

Recipe

  • 1 preheat the oven to 450 degrees.
  • 2 in a glass baking dish, squeeze the juice of one lemon. add the olive oil.
  • 3 put the fillets in the dish and rub the lemon oil mixture on both sides; add salt and pepper to taste.
  • 4 take large spoonfuls of the spinach, sauce and cheese (in that order) and place in the center of each fillet.
  • 5 roll up each fillet and secure with a toothpick.
  • 6 add remaining ingredients in between and on top of the fillets; and squeeze the second lemon on top.
  • 7 bake uncovered for 20 minutes.
