Mediterranean Catfish

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 2 -4 farm-raised catfish fillets (6 oz. each)
  • 2 tablespoons olive oil
  • 1 medium bell pepper, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 1 cup chicken broth
  • 1 (14 1/2 ounce) can diced tomatoes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon black pepper

Recipe

  • 1 heat olive oil in large skillet over medium heat.
  • 2 add bell pepper, onion and garlic, and saute for 2-3 minutes, or until vegetables are tender.
  • 3 add chicken broth, tomatoes, oregano, basil and black pepper; bring to a boil and cook for 2 minutes.
  • 4 reduce heat to medium-low.
  • 5 place catfish fillets in the sauce, cover, and simmer for 7-9 minutes, or until the fish flakes easily with a fork.
  • 6 individual fillets with sauce may be served over a bed of cooked rice.
