Mediterranean Catfish

Ingredients
- 2 -4 farm-raised catfish fillets (6 oz. each)
- 2 tablespoons olive oil
- 1 medium bell pepper, chopped
- 1 medium onion, chopped
- 2 cloves garlic, chopped
- 1 cup chicken broth
- 1 (14 1/2 ounce) can diced tomatoes
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon black pepper
Recipe
- 1 heat olive oil in large skillet over medium heat.
- 2 add bell pepper, onion and garlic, and saute for 2-3 minutes, or until vegetables are tender.
- 3 add chicken broth, tomatoes, oregano, basil and black pepper; bring to a boil and cook for 2 minutes.
- 4 reduce heat to medium-low.
- 5 place catfish fillets in the sauce, cover, and simmer for 7-9 minutes, or until the fish flakes easily with a fork.
- 6 individual fillets with sauce may be served over a bed of cooked rice.
