Red Pesto Chicken With Gnocchi

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 8 chicken thigh fillets, halved
  • 500 g potato gnocchi
  • 1 teaspoon minced garlic
  • 1/2 cup wine
  • 1/2 cup sun-dried tomato pesto
  • 300 ml cream

Recipe

  • 1 heat olive oil in a pan.
  • 2 cook chicken over medium heat until browned.
  • 3 place gnocchi in a pot of water and boil.
  • 4 meanwhile, remove chicken from pan and cover.
  • 5 add garlic to pan.
  • 6 add wine and simmer uncovered until almost evaporated.
  • 7 add pesto and cream and bring to the boil.
  • 8 serve chicken on top of cooked, drained gnocchi and cover with sauce.
