Halibut Topped With Olives, Arugula, And Cottage Cheese

Ingredients
- 20 ounces halibut fillets
- 1/2 cup cottage cheese
- 3 ounces kalamata olives, pitted
- 1 clove garlic, finely chopped
- 1 ounce arugula (a handful)
- 1/4 teaspoon ground black pepper
- 1/4 small onion, finely chopped
- 1 tablespoon olive oil
- 1/2 cup dry wine
- salt
- 4 slices lemons
Recipe
- 1 coarsely chop the olive and the arugula. combine the cottage cheese, arugula, garlic, and pepper. mix well and adjust the seasoning with salt. cover the fish fillets with a layer of the mixture.
- 2 preheat broiler.
- 3 heat a heavy ovenproof skillet over low-medium heat. add olive oil and chopped onions. cook until the onions are soft, but not browned. add wine and bring to a boil.
- 4 place fish fillets in the pan. place under broiler for 7-10 minutes.
- 5 remove fillets from pan, sprinkle with a bit of the cooking liquid, garnish with lemon slices, and serve!
