Halibut Topped With Olives, Arugula, And Cottage Cheese

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • 20 ounces halibut fillets
  • 1/2 cup cottage cheese
  • 3 ounces kalamata olives, pitted
  • 1 clove garlic, finely chopped
  • 1 ounce arugula (a handful)
  • 1/4 teaspoon ground black pepper
  • 1/4 small onion, finely chopped
  • 1 tablespoon olive oil
  • 1/2 cup dry wine
  • salt
  • 4 slices lemons

Recipe

  • 1 coarsely chop the olive and the arugula. combine the cottage cheese, arugula, garlic, and pepper. mix well and adjust the seasoning with salt. cover the fish fillets with a layer of the mixture.
  • 2 preheat broiler.
  • 3 heat a heavy ovenproof skillet over low-medium heat. add olive oil and chopped onions. cook until the onions are soft, but not browned. add wine and bring to a boil.
  • 4 place fish fillets in the pan. place under broiler for 7-10 minutes.
  • 5 remove fillets from pan, sprinkle with a bit of the cooking liquid, garnish with lemon slices, and serve!
