Alaskan Apple Spiced Halibut (or Salmon)

Total Time: 50 mins Preparation Time: 5 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 8 (12 ounce) halibut fillets or 8 (12 ounce) salmon fillets
  • 1 shallot, diced (about 1/4 cup)
  • 1/4 cup apple jelly
  • 1 tablespoon lemon juice
  • 1/2 teaspoon allspice
  • 3 tablespoons slivered almonds
  • 2 tablespoons butter, melted

Recipe

  • 1 preheat oven to 325 degrees f.
  • 2 in a small saucepan, heat the apple jelly until liquid. add the lemon juice and allspice, then stir well.
  • 3 place the halibut fillets in a lightly-buttered baking dish, then brush the glaze over them.
  • 4 add the melted butter to the baking dish and pour the remaining glaze over the fillets, sprinkle with shallot and almonds.
  • 5 cover pan and bake at 325 degrees f for 10 minutes for every 1 inch of fillet thickness (probably between 35-45 minutes), spooning the glaze periodically over the fillets as they bake.
  • 6 serve with a nice pilaf and vegetable (buttered french cut green beans are good).
