Genoese Condijun

Ingredients

  • 6 large tomatoes, peeled and sliced
  • 1 medium cucumber, washed and thinly sliced
  • 1 med-sized green pepper, cleaned and cut into thin strips
  • 1 med-sized onion, peeled and chopped
  • 2 garlic cloves, crushed
  • 8 flat anchovy fillets, drained and chopped
  • 12 pitted black olives
  • 1/3 cup olive oil
  • 1/2 teaspoon dried basil
  • 1/4 cup chopped fresh parsley (italian flat leaf)
  • salt and pepper

Recipe

  • 1 combine tomato and cucumber slices, pepper strips, chopped onions, and garlic in a serving dish.
  • 2 top with chopped anchovies and olives.
  • 3 combine remaining ingredients and pour over salad.
  • 4 mix well and serve.
