Ingredients
- 6 large tomatoes, peeled and sliced
- 1 medium cucumber, washed and thinly sliced
- 1 med-sized green pepper, cleaned and cut into thin strips
- 1 med-sized onion, peeled and chopped
- 2 garlic cloves, crushed
- 8 flat anchovy fillets, drained and chopped
- 12 pitted black olives
- 1/3 cup olive oil
- 1/2 teaspoon dried basil
- 1/4 cup chopped fresh parsley (italian flat leaf)
- salt and pepper
Recipe
- 1 combine tomato and cucumber slices, pepper strips, chopped onions, and garlic in a serving dish.
- 2 top with chopped anchovies and olives.
- 3 combine remaining ingredients and pour over salad.
- 4 mix well and serve.
