Fish With Spinach And Feta Cheese

Ingredients

• 1 tablespoon olive oil
• 2 garlic cloves, minced
• 1 bunch spinach
• 1 cup salsa, strained
• 1 lb fish fillet
• 1/2 teaspoon pepper
• 1/2 teaspoon salt
• 1 cup herbed feta cheese

Recipe

• 1 spray baking dish with pam.
• 2 preheat oven to 450 deg.
• 3 in skillet heat oil over med.low heat add garlic and stir for 1 minute add spinach a handful at a time till wilted.
• 4 stir in salsa, remove from heat.
• 5 arrange 1/2 mixture into baking dish.
• 6 season fillets with salt and pepper and put on top of spinach mixture.
• 7 top with remaining spinach mixture.
• 8 top with crumbled feta and bake for 15- 20 minute.
