Chicken, Potato And Spinach Curry

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 250 g spinach, chopped
  • 2 tablespoons oil
  • 1 onion, chopped
  • 2 tablespoons indian curry paste
  • 1 large potato, diced
  • 1 cup chicken stock
  • 4 thigh fillets, chopped
  • salt
  • lime juice

Recipe

  • 1 heat 2 tablespoons oil and add the onion, curry paste and the potato.
  • 2 stir until potato starts to brown, about 5 minutes.
  • 3 add the stock and bring to a rapid boil.
  • 4 add the chicken and the spinach.
  • 5 reduce the heat and simmer, covered, for 7 minutes.
  • 6 season with salt and fresh lime juice.
